As I was dusting Parmesan cheese onto my spaghetti Bolognaise the other night I fell to wondering what the backstory of Parmesan in Australia was. When was it first mentioned in Australia? When was it first locally produced? When was the first recipe using Parmesan published? (Those two don’t have to be the same). How else was it used? This vignette is something of answer to those and other questions that may arise.
