I bought the cookbook because I like half the world it seems fell in love with Christopher Thé’s Watermelon Cake, reputedly now the most Instagrammed cake. A three-tiered version was the wedding cake for son Jesse’s and daughter-in-law Lizeth’s reception and put other wedding cakes to shame. I imagined that there would be recipes for some of his other pastries I have had over time, like frankincense (or was it myrrh?) Hot Cross Buns. The book exceeded my expectations. It is a collection of 124 recipes for all manner of things baked with native ingredients. The sheer volume of experimentation and knowledge to arrive at the featured recipes is staggering.
